Mammoth Sandwich Island Salsify

Description

A Mediterranean heirloom from at least the 1800’s. Great in stews and soups. Sometimes referred to as “Vegetable Oyster” due to its remarkable oyster-like flavor. Plant in Spring, and dig up in Fall. Long roots grow to 8-10″ long, and have white flesh. Plant resembles grass. Matures in 120 days.
