A hard to find eggplant variety from seed saver Thim Singhatat. Thai Yellow Eggplant is a miniature variety, producing small, round or oval fruits, the size of an egg. The outer skin is smooth and white when young and transforms into a golden yellow when mature. An Asian heirloom popular in south Asian cuisines and best suited for sautéing, frying, and roasting and are popular in coconut milk-based curries. Known for their bitter taste, the seeds are first removed, and the flesh soaked in water to reduce sourness. Matures in 80-90 days.
