Pre-1860 variety. Round, above-ground "bulbs" with light green, smooth skin have creamy white, tender flesh. Use bulbs when the size of a tennisball before they become hard. Store in cool, frost-free place for winter use. Matures in 50-65 days. All parts of the kohlrabi can be eaten, both raw and cooked. It is delicious steamed, sautéed, roasted, stuffed, creamed, in soup or stew, as well as countless other ways.
